Cuvée Soleil de Mai

The House Desruets established its vineyard on terrains of exceptional quality. Using traditional methods and century-old knowledge, the Desruets family has worked hard since the 19th century to produce the best champagnes. The family-owned vineyard was founded in 1888 in Hautvillers, in the village where Dom Pérignon discovered champagne. Today, Matthias and Thomas Desruets are the 6th generation who continue the tradition. From one generation to the next, the house harnesses its ancestral knowledge to obtain wines of peculiarities and flavors to make a unique champagne.

Spirit of Soleil de Mai

The cuvée Soleil de Mai reveals our terroir: symbiosis between the oaks of the Hautvillers forest and the Premier cru wines of the village. The elegance of Chardonnay complemented by the fruity Pinot Noir expresses all the aromatic complexity of the Cradle of Champagne. The wood sublimates the singularity of this wine which represents the new generation of the House Desruets. The wine offers a unique emotion that evolves and unfolds through aromas constantly renewed during the time of tasting.

The senses

A rich champagne, round with layers of quince jelly, apricot jam, ripe nectarine and blood orange. The finish is long and fresh with vanilla flavours.

The color is a beautiful amber pink «partridge’s eye». In the glass, an elegant effervescence, regular and of rare finesse.

 A first delicate nose of orange blossom followed by an explosion of ripe red fruits, pink grapefruit and umami notes in the mouth. A mineral, long and salty finish.

Recommendations

A cuvée to be enjoyed as an accompaniment to crustaceans (crayfish, lobsters), soft and soft cheeses or white meats.

Serve at 9-10°C.
